Mediterranean Pan-Seared Cod in Tomato-Basil Sauce
Ingredients:
6 cod fillets
1 large onion, finely chopped
5 garlic cloves, minced
3 cups cherry tomatoes, halved
1 can (600 g) diced tomatoes
3/4 cup fresh basil leaves, chopped
1/3 cup dry white wine
Salt and pepper to taste
Lemon wedges for serving
Instructions:
Preparation: Season the cod fillets with salt and pepper. Heat the olive oil in a large skillet over medium heat.
Sauté Onions and Garlic: Add the onions and sauté for about 5 minutes until soft. Add the garlic and cook for 1 more minute.
Add Tomatoes: Stir in the cherry tomatoes and diced tomatoes. Pour in the white wine and bring the mixture to a simmer.
Cook the Cod: Place the seasoned cod fillets in the skillet and spoon the sauce over them. Cover the skillet and let the fish simmer for 8-10 minutes until cooked through.
Finish with Basil and Serve: Sprinkle the chopped basil over the cooked cod fillets. Serve with lemon wedges.
