Coconut-Lime Fish with Rice
A delicious tropical-inspired dish that’s simple to prepare.
Ingredients:
1 pound of red snapper or cod fillets
1 can (13.5 oz) of coconut milk
1 lime, zest and juice
1 tablespoon of fish sauce
1 teaspoon of red pepper flakes (adjust to taste)
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 garlic cloves, minced
1 tablespoon of olive oil
1 cup of cooked rice
Instructions:
Prepare the Fish: Lightly season the fish fillets with salt, black pepper, and a splash of fresh lime juice.
Create the Sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until aromatic.
Add Coconut Milk and Seasonings: Stir in the coconut milk, lime juice, fish sauce, and red pepper flakes. Allow the mixture to come to a gentle simmer.
Cook the Fish: Carefully place the seasoned fish fillets in the sauce. Cover the skillet and let the fish simmer for 5-7 minutes, or until it flakes easily with a fork.
Serve: Spoon the fish and sauce over a bed of cooked rice. Garnish with lime wedges and freshly chopped cilantro for extra flavor.
Tips:
For a kick of heat, add extra red pepper flakes or a diced chili pepper.
Substitute the red snapper with another white fish like tilapia or halibut if desired.
Pair with steamed veggies or a crisp salad for a complete meal.
