French Garlic Soup

Making French Garlic Soup

Ingredients:

2 tablespoons olive oil

1 large onion, chopped

1 bay leaf

2 heads of garlic, peeled and cloves left whole

1.5 liters low-sodium chicken or vegetable broth

1/2 teaspoon dried thyme

Salt and pepper to taste

4 large egg yolks

60 g grated Parmesan cheese

1/2 cup stale bread, cubed (for serving)

Fresh parsley, chopped (for garnish)

Instructions:

Sauté Garlic and Onions: Heat the olive oil in a large pot over medium heat. Add the whole garlic cloves and sauté for 5-7 minutes until they are soft and lightly golden. Add the chopped onion and cook for an additional 5 minutes until translucent.

Simmer the Soup: Add the broth, bay leaf, thyme, salt, and pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes until the garlic is very soft. Remove the bay leaf.

Purée: Use an immersion blender or transfer the soup to a stand blender to purée until smooth. Return the soup to the pot if needed.

Thicken with Egg Yolks and Parmesan: In a small bowl, whisk together the egg yolks and grated Parmesan. Gradually stir in a bit of the hot soup to temper the eggs, stirring continuously. Slowly add this mixture back into the soup, stirring over low heat without bringing it to a boil.

Serve: Ladle the soup into bowls and top with bread cubes and chopped fresh parsley.
