Oven-Baked Salmon Bites with Creamy Avocado Dip
Ingredients:
For the Salmon Bites:
2 lbs salmon fillet, skin removed and finely chopped
2 large eggs
4 cloves garlic, minced
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
2 teaspoons Dijon mustard
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons lemon juice
For the Creamy Avocado Dip:
2 ripe avocados
1/2 cup plain Greek yogurt
2 cloves garlic, minced
2 tablespoons lime juice
2 tablespoons olive oil
Salt and pepper, to taste
Instructions:
For the Salmon Bites:
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, mix together the chopped salmon, panko breadcrumbs, eggs, minced garlic, dill, parsley, Dijon mustard, salt, pepper, and lemon juice until well combined.
Form the mixture into small bites or balls and arrange them evenly on the baking sheet.
Bake for 12-15 minutes, until the bites are fully cooked and lightly browned.
For the Creamy Avocado Dip:
In a blender or food processor, combine the avocados, Greek yogurt, garlic, lime juice, and olive oil. Blend until smooth and creamy.
Season with salt and pepper to taste.
Serve the dip with the warm salmon bites. Enjoy!
